Recipe review - Pepper-Sausage scramble


Sausage-Pepper scramble
Just Like my grandmother Used to Cook
Readers Digest page 149

Ingrediants
12 ounces smoked sausage or breakfast links
1 cup chopped green pepper
1 medium onion chopped
1 clove garlic, chopped
1 can (14 ½ Oz) low sodium stewed tomatoes
1 tbsp flour
1 cup frozen then thawed sweet corn
2 Tbsp parsley
1 Tbsp firmly packed brown sugar
1 Tbsp vinegar
1 Tbsp prepared mustard
½ tsp marjoram leaves
¼ tsp black pepper

Preperation
#1 Heat a skillet over a moderately high heat. Add sausage, green pepper, garlic and onion, cook for 5 minutes or until vegetables are tender.

#2 drain the tomatoes and reserve the juice. Mix the juice and flour and add that to sausage mix. Now add everything else. Cook over moderate heat until it thickens. Serve over rice.

Serves 3-4

Results: very yummy!!! I did make a goof instead of smoked sausage I wrote down (on the shopping list) and bought breakfast sausage. I bought the Maple syrup flavored sausage thinking it would be a good contrast with the pepper and it was. I also only cooked the sausage not the vegetables. I made this the night before so eat after I came home from work. So everything was in a bowl that got mixed up before I zapped it in the microwave. I think leaving everything to sit over night made a nice mix with the peppers, onions and sausage.

This recipe gets a big old happy face in the cookbook.
