Recipe review - Bacon Cheeseburger Meatloaf


Bacon Cheeseburger Meatloaf
Paula Deen recipe

Ingrediants:
1 pound ground chuck
10 slices of bacon, cooked and crumbled
8 oz sharp Cheddar cheese, shredded
2 large eggs, lightly beaten
¼ cup bread crumbs, toasted
¼ cup mayonnaise
1 Tbsp Worcestershire sauce
¼ tsp salt
¼ tsp black pepper
1/3 cup Ketchup
2 Tbsp mustard
1 (3 oz can) of French fried onions

Directions
Preheat oven to 350 F.
Mix ground chuck and next 8 ingredients, mix well.
In a small bowl, combine ketchup and mustard. Stir ¼ cup of mixture into the meat mix. Reserve the remaining ketchup mix.
Shape meat mix into a loaf or use a loaf pan. (you really need to allow the grease to stay away from the meat as its cooking)
Spread remaining ketchup mix over the loaf
Bake for 40 minutes
Top with fried onions return to oven
Bake 10 – 15 minutes until meat is not pink.


My results:

YUM with problems. First I did not allow the grease to get away from the
loaf and it really does need to stay away. My loaf did not hold together. I used a spicy mustard (I don't like yellow) and even that was to much mustard for my liking. I didnt use ground chuck used 80/20 ground beef sorry $1.65 a pound versus $2.69? and I'm sure that was part of the grease problem I had. Great taste!!! except for the mustard. Greg ate leftovers and that is a good sign that he liked it!!!
