Reader’s Digest - Like Grandma Used To Make
Ingredients
4 boneless pork loin chops
2 medium carrots, sliced
1 medium onion, thinly sliced
4 lemon slices
2/3 cup apple juice
3 Tbsp packed light brown sugar
3 Tbsp vinegar
1 clove garlic, minced
½ tsp ground ginger
¼ tsp each salt & black pepper
3 Tbsp cold water
4 tsp cornstarch
Directions:
#1. Coat 10 inch skillet with cooking spray. Heat skillet over medium heat. Add pork chops and cook for 3 minutes on each side or until brown.
#2. Add carrots, onion and lemon slices. In a small bowl, combine apple juice, brown sugar, vinegar, garlic, salt & pepper. Pour over the pork chops and vegetables.
#3. Bring to a boil. Lower the heat and simmer, covered for 5 minutes or until chops are no longer pink. Transfer chops and lemon slices to a platter, cover and keep warm.
#4. In a small bowl, combine water and cornstarch, then stir into the apple mixture. Cook for 2 minutes or until the mix is thick. Spoon over chops. Serve with rice or noodles. Makes 4 servings.

Results - another great meal from this cookbook. I did use Leeks instead of the onion but I think it does need the stronger onion flavor.
