Dinner tonight/Taco soup




It has been cooler so I decided to make Taco Soup for dinner. This is a recipe that I found online but of course I had to make some changes.

Ingrediants
1 pound ground beef (I used 80/20) but use whatever meat you wish
15 oz can of corn kernels, undrained
15 oz cans of tomatoes, I used some fresh cooked 2 cans worth
15 oz tomato sauce (didn’t use I used the fresh cooked tomatoes)
15 oz can of kidney beans, drained but it calls for undrained
15 oz can of refried beans
2 packets of taco seasoning (I used one low sodium and 1 cheesy)
1 onion, calls for a large onion add what you want based on your taste
1 small red spicy pepper, chopped Recipe calls for 1 – 4oz can green chilis

Directions:
Brown the ground meat, drain if you have too much fat
Add all ingredients
Heat

I topped mine with shredded cheese, chopped lettuce and a dollop of sour cream. Serve taco type chips I drained my kidney beans I don’t like that yucky oil/juice that they come in. Nice thing about this is that it can sit for hours so it makes a great tailgate party dish!!!
